
Vegetable Omelette with Herbs - The Easiest Breakfast Recipe for those Busy Mornings!

Ingredients:
• 2 free-range eggs
• 1⁄4 zucchini, grated
• 1⁄4 red capsicum, finely diced
• Handful of baby spinach, chopped
• 1 tbsp chopped fresh parsley
• 1 tsp cold-pressed olive oil
• Salt & pepper, to taste
Method:
1. Crack eggs into a bowl and whisk with salt, pepper, and parsley.
2. Heat olive oil in a non-stick pan over medium heat.
3. Sauté zucchini, capsicum, and spinach for 1–2 minutes until softened.
4. Pour eggs over the vegetables, gently spreading them out.
5. Cook for 2–3 minutes or until the omelette is set. Fold and serve warm.
Serving Suggestion: Serve with sliced avocado and a side of fermented sourdough.
